Το τόφου είναι ένα προϊόν από σόγια, πλούσιο σε φυτική πρωτεΐνη, το οποίο είναι ιδιαίτερα δημοφιλές στις κουζίνες χωρών της Άπω Ανατολής, αλλά και μεταξύ των χορτοφάγων. Για να φτάσουμε στην τελική μορφή του τόφου, στα γνωστά δηλαδή λευκά τετράγωνα, πρώτα πήζει το γάλα σόγιας, διαδικασία η οποία οδηγεί στον διαχωρισμό του τυροπήγματος από το τυρόγαλα. Στη συνέχεια ότι απομένει, δίνοντάς μας την τελική μορφή. Η αλήθεια είναι ότι οι περισσότεροι από αυτούς που το δοκιμάζουν, σχηματίζουν πολύ κακή άποψη. Και αυτό συμβαίνει για δύο λόγους. Πρώτον, οι περισσότεροι νομίζουν πως είναι τυρί και δεύτερον λίγοι γνωρίζουν πώς να το μαγειρέψουν σωστά. Μπορεί να θυμίζει στην όψη και στον τρόπο παραγωγής του με τυρί, ωστόσο στη γεύση και στη χρήση του δεν έχει καμία απολύτως σχέση.
